Specialized Parts
The buckets which feed the prover pockets have a low friction coating. A pattern is machined onto the buckets to reduce the contact area between dough and bucket. Coating and pattern must be exact to avoid stoppages caused by dough sticking to the bucket.
The chute linking bucket and pocket has a low friction coating. This coating, plus the precise angle and shape of the chute, are critical to the process.
The precise combination of flexible mesh pocket material and mesh pitch is essential to smooth, hygienic operation.
