The Accurist2.1™ uses servo control to achieve the optimum balance between accuracy and quality, even at high output. Cell structure is preserved by gentle dough handling, while the control system monitors dough pressure and weights to maintain accuracy. Efficient lubrication and low-wear components sustain the accuracy for thousands of hours and a washdown capability contributes to hygiene and easy cleaning.
Gentle dough handling without loss of accuracy
Servo control preserves cell structure by minimizing shear, compression and ram movement. Quality benefits include up to 15% increase in cell count, up to 20% increase in softness, greater volume, improved crumb structure and better colour, with a standard deviation of 2.5g to 3.5g SD on 900g pieces.
Maintained quality and low lifetime running costs
Wear is minimized by long-life components, efficient lubrication, minimum ram movement and low-pressure operations. These combine with low oil consumption to reduce running costs and maintain accuracy over 10,000 hours. Five year major service intervals are supported by cost-effective service contracts and replacement parts.
Easy to operate and clean, with full washdown capability
An intuitive touch screen HMI provides recipe selection with optimum settings for each product, minimizing start-up times. Speed, ram pressure and scaling weights are all monitored and easily adjusted. Washdown function provides foam-and-rinse cleaning, and the unit is portable for off-line cleaning and maintenance.
