The classic chocolate chip cookie is the best known product of this type, but it is only one of a wide range that can be made using a Baker Perkins wirecut machine.

The dough is usually soft or very soft and may be plain or carry inclusions. A slow, gentle bake allows the dough pieces to flow in the oven and this, combined with the cutting marks left by the wire, gives the products their characteristic ‘home-baked’ appearance.

Sizes range from mini to large, and although round is by far the most common shape, other products such as heart, flower and animal shaped cookies are possible. Along with two-dough and gourmet cookies - featuring large chunks of luxury ingredients such as chocolate, nuts and fruit - these extend the reach of cookies beyond grocery and into seasonal, luxury and other high-margin sectors.
