The TruClean™ Rotary Cutter is part of Baker Perkins' high-output dough forming system for cracker biscuits and hard sweet biscuits. These systems sheet, gauge and cut dough pieces for baking. Designed for hygiene
Two levels of sanitation are available for every machine in the TruClean™ range. This allows customers to choose the one that best matches the sensitive cross-contact risks they face and the cleaning protocols they use. Both levels meet the standards set by industry bodies such as GMA and BEMA.
Low cost of ownership
Three important principles form the basis of this re-design: reducing accumulation of unwanted materials; improving visibility and access for cleaning; and simplifying the removal and replacement of components and assemblies without the need for tools or technicians. Low cleaning and maintenance requirements minimize operating and running costs in every area of operation
Outstanding performance, reliability and ease of use have been carried forward from the previous generation machines. Efficient start/stop routines give fast changeovers.
Easy to operate and maintain
Indication and setting of all operator adjustments are carried out via a simple and intuitive touch screen HMI positioned to provide operators with a clear view of the product area. Die roll changes are accomplished rapidly and without the use of tools. A rapid bypass feature avoids problems from an imperfect dough sheet by enabling it to be diverted to the scrap lift at the touch of a button.
