Baker Perkins has redesigned and upgraded a number of machines in the bakery mixing and forming range in order to improve loaf quality - without increasing costs.
Covering the TweedyTM mixer, Accurist2TM divider and Multitex4TM moulder the paper shows how improved mixing and gentle handling of dough has led to an increase in loaf volume, better colour, increased resilience and greater softness.
It explains how this is achieved without any changes to the recipe or process, ensuring that ingredient costs and plant efficiency are maintained.
