Moulder head replacement (Multitex4)

Four pairs of sheeting rolls

The performance of most types of bread moulder can be improved by replacing the sheeting head with a new Baker Perkins Multitex4 unit.  This upgrade enables bread quality to be improved, uptime to be increased and production costs reduced.

The main feature of the Multitex4 sheeting head is the four pairs of close coupled sheeting rollers.  These enable a thinner dough sheet and more coils to be produced without subjecting the dough to undue stress.  The result is a 10% increase in cell count leading to a finer, more even texture, a well defined shape and better colour.  Although the bread is more resilient the loaf feels softer, which extends shelf life.

The Multitex4 also improves operational efficiency.  Centralising rollers ensure that dough pieces always pass though the middle of the moulder to  guarantee consistent four piecing and panning.  Along with the self cleaning sheeting rolls they also ensure that stoppages are minimised, especially when the dough is sticky or gassy.  Spring loaded rollers throughout allow doubles to pass through the sheeting head without causing a stoppage.
Product costs may be reduced by improved operating efficiency, increased water content and reduced amounts of expensive additives.
