Baker Perkins provides mixing technology for every type of biscuit dough, and several hundred High Speed universal batch mixers are at work in the industry. Development continues, and the latest option is Variable Frequency Drive (VFD) allowing a mixer to be run at any speed within its operating range.
Rotary moulding is an industry-standard method of making soft dough biscuits, and Baker Perkins has been at the forefront of this technology since its introduction. The Series2 Rotary Moulder provides the key benefit of total control flexibility, with a ‘plug-in’ capability and a range of options to meet customers’ specific needs, including a High Speed unit.
Other options include the TruClean Rotary Moulder which is a hygieinc rotary moulder that is easy to operate and maintain.
While many companies prefer the uniform appearance of a rotary moulded biscuit, with its flat top and predictable stack height, some opt for the ‘home made’ appearance of the wirecut process. The Baker Perkins TruClean Wirecut combines hygienic design with the ability to control product weights very closely and gap adjustability that allows large inclusions (typically chocolate chunks, nuts and raisins) to be handled without impairment.
Baking is a vital process, and the Baker Perkins Jetcirc Convection Oven makes major savings for biscuit makers in bake time, capital cost and energy. It also provides significant quality, consistency and reliability benefits by creating a dependable and stable airflow within the chamber.
The EM Recirc Oven is the standard machine in North America for baking soft dough biscuits and cookies. It offers the ability to change the baking method from radiant to convection – or any combination in between.
