Multitex4 Moulder

Research into bread moulding shows that dough damage caused during sheeting is minimised by using a greater quantity of smaller diameter rolls. With Baker Perkins’ new Multitex4 moulder*, four pairs of sheeting rollers, with adjustable speed and gap, ensure that optimum sheeting thickness is achieved with minimum dough damage.  Bread quality is significantly improved
with no increase in ingredient costs or reduction in output.

Premium quality

The process delivers a 10% increase in both volume and cell count, a finer, more even texture and better colour.  Trials also show that softness is increased by 18% for longer shelf life.  The bold, straight-sided loaf shape is ideal for sandwiches

High controllability

The Multitex4 achieves more uniform 4 piecing and tighter coiling.  Dough piece length can be matched to a variety of tin lengths with less work and less stress

Versatility

Varying dough characteristics are easily handled, including ageing dough resulting from downstream stoppages and dough with higher water addition. Doubles can be handled without causing stoppages

The Multitex4 can be supplied as a completely new unit or a new head retrofitted to existing moulder tables.  Either way offers a low-cost entry to the premium bread market

Options

Innovation Centre

Baker Perkins’ Bakery Innovation Centre at Peterborough contains a Multitex4 moulder and a conventional three-roll 'Supertex' moulder.  Both machines are available for trials to evaluate the benefits of the 4-roll concept.
