Dividing and moulding without the use of flour dusting
Cleaner operation, higher quality, lower costs
Recent trials conducted by Baker Perkins in a North American bakery have demonstrated that efficient, high-output bread forming can be achieved without the need for dusting flour.
Although well proven in Europe and Australasia dust-free processing has proved elusive in North America because of the softer, stickier nature of the dough. The introduction of gentle dough handling principles to the design of the equipment overcomes these historical limitations and, as a bonus, also delivers improved bread quality.
Further trials using North American style dough, comparing the
performance of the Multitex4 against established cross-grain
processing,demonstrated that loaf texture can be improved through
gentler dough handling. An increase in cell count, more uniform
structure, reduced number of larger holes and less noticeable
swirling were observed.
Quality improvements through gentle dough handling can also be achieved using an Accurist2 divider in place of a conventional ram-and-shear or extrusion divider. As well as better loaf texture the process results in less sticky dough which helps with the elimination of flour dusting.
