Turbofilm Cooker


Introduction:
This system is specifically configured for operation in conjunction with the “ServoGel” depositing line and is designed to hydrate and cook the standard recipes formulated for the ServoGel process to solids contents in the range 79% to 81%.
Products to be handled include:
- Pectin Jelly
- Starch/Gelatine Jelly
- Gelatine Jelly
- Starch Jelly
Anticipated outputs would be between 400Kg/hr and 800Kg/hr for each product.
Infeed conditions to the cooker skid are as follows:
- Pectin Jelly: Pectin dissolved. Sugar partially dissolved. Slurry pre-heated to 80 degC
- Starch/Gelatine Jelly: Gelatine dissolved. Starches not hydrated. Sugar partially dissolved. Slurry pre-heated to 80 degC
- Gelatine Jelly: Gelatine dissolved. Sugar partially dissolved. Slurry pre-heated to 80 degC
- Starch Jelly: Starches not hydrated. Sugar partially dissolved. Slurry pre-heated to 80 degC.
Description:
The skid mounted unit comprises two cooking systems in parallel with a two zone Plate heat exchanger dissolver/cooker for Pectin jellies or, alternately, a Jet cooker for Starch, Gelatine and Starch/Gelatine jellies. High final solids Starch, Gelatine, and Starch/Gelatine jellies can also be processed through the Plate heat exchanger provided a Vacuum flash is fitted.
A product back pressure can be applied to either cooker. With the Plate heat exchanger the back pressure holds back the evaporation which facilitates full dissolving and hydration whilst keeping “burn on” to a minimum. With the Jet cooker the back pressure allows steam to be injected into the product stream at high pressures to develop sufficient temperature to dissolve, hydrate, and explode the starch granules.
Both cookers flash into the same vapour separation vessel, which is configured for Atmospheric flash or Vacuum flash depending on the cooker used, the formulation, and the final solids required.
A syrup discharge pump from the vapour separation vessel is included.
The plates in the Plate heat exchanger and the Jet cooker are manufactured from 316 stainless steel. The skid support frame is manufactured from 304 stainless steel.
All steam pipework and control gear are included with automatic 3 term control of cook temperature on both Plate and Jet cookers.
Interconnecting product pipework on the skid is also included which incorporates a retention pipe after the jet cooker, and before the back pressure valve, to provide retention time for cooking high amylose starches.
An Indirect Condenser is specified.
