Natural Fruit Snacks

Baker Perkins has created a new, healthy snack concept. Deposited fruit snacks can be positioned as a healthy alternative to conventional snacks or confectionery, or used to bring interest and variety to the health food market. These products are 100% fruit, all natural and contain no added sugar.
Fruit snacks can be offered as bite-size pieces or bars, and be positioned as a means of increasing fruit intake for both children and adults. Real fruit juice may be added as a centre filling and the healthy profile further enhanced with vitamins, calcium or other functional ingredients. There is no more than 1% fat.
These snacks are made by depositing fruit paste using a ServoGel Natural technology, a depositing process developed by Baker Perkins for traditional jelly and gum confectionery, now adapted to enable manufacturers to meet consumer interest in healthy foods.
Evaluation of 100% fruit snacks produced on a Baker Perkins ServoGel Natural system confirms that they contain sufficient DHA Omega-3 fatty acids to allow the claim to be made that it helps to maintain normal brain function.
Baker Perkins' formulation for its 100% fruit snacks delivers 31.35 mg of DHA per 100 gram serving, which counts towards the European Food Safety Authority’s recommended intake of 250mg per day. For consumers looking to maintain normal brain function, these snacks are an ideal choice.
The tests were carried out by Nu-Mega Ingredients a leading international manufacturer of science-based nutritional ingredients for a healthy lifestyle.
Baker Perkins offers a complete production package that includes ingredient, formulation and process parameters, product development and testing, cooking and depositing equipment that interfaces directly with finishing and wrapping equipment, plus installation, commissioning and operator training. A pilot scale depositing line is available for customers to develop new products in the Baker Perkins Innovation Centre at Peterborough, UK.
The hygienic ServoGel Natural process combines low capital and running costs with a minimal space requirement.
The nature of the depositing process creates complete control throughout the system, leading to extremely high dimensional, shape and weight accuracy with negligible scrap rates, and maximum hygiene.
