Sugar Free Cooking
Cooking of sugar free syrups on a Microfilm cooker involves the incorporation of a modular vacuum evaporator. This sits alongside the cooker and is used only when cooking sugar free syrups. The full capability of the Mcrofilm to cook sugar and high milk syrups is unaffected
Typically, sugar free syrups are based on one of a range of Polyols such as Isomalt, a low calorie sweetener made by Palatinit of Germany, as a replacement for sugar in depositing operations – sugar free candy is assuming mounting significance as consumer perception of dietary issues increases.
This sugar-free option is also available as an upgrade kit for existing installations.
A new development from Baker Perkins is a range of products made using crystallised Xylitol, a tooth-frineldy sugar substitute, in conjunction with sugar free hard candy. Read more
