Greek company expands with Baker Perkins

Investment in cooking and depositing technology
A leading Greek confectionery company has significantly expanded its product range by investing in cooking and depositing technology from Baker Perkins. The new equipment is making a significant contribution to business development at Hermes S.A, based at Liossia-Athens.
Hermes S.A. have built up a strong presence in their local market with a range of toffees, die formed candies, chews and jelly products. Trials in the Baker Perkins Innovation Centre at Peterborough convinced them that adding a depositing line to their production facilities would create growth in both home and export markets.
The plant installed at Hermes S.A. includes a Microfilm cooker, depositor and cooling tunnel, plus three optional systems that enhance end product capability - milk/cream injection, colour/flavour addition, and a sugar-free cooking module.
It gives Hermes S.A. the ability to make solid candy; two-colour striped candy; hard candy with a soft centre fill such as jam or chocolate; and fruit, milk and cream based candies. All of these options can be produced as conventional sugar products, or in sugar-free versions.
The majority of new Baker Perkins depositing plants are now supplied with a sugar-free option, enabling confectioners around the world to meet the rapid rise in demand for healthier foods.
Compared with conventional die forming, depositing provides distinct benefits in visual impact, consistency and quality in terms of high dimensional and shape accuracy.
Baker Perkins is the world leader in the supply of complete lines for depositing candy, from weighing and mixing of ingredients through to depositing and cooling. Around 500 plants are at work.
Systems can be configured for hard, soft or chewy candy products. Also in the range is a machine designed specifically for lollipops; a Compact low output line for hard candy or toffee; and a Universal option offering both hard candy and toffee/caramel capability.
