Complete confectionery plant in Morocco

Baker Perkina has successfully installed and commissioned a total confectionery cooking and depositing solution from raw ingredients to finished product, to enable Moroccan confectionery maker Aiguebelle - Compagnie Cherifienne de Chocolaterie (CCC) to expand into the hard candy market.

Perkins to supply equipment for this first investment in
sugar/sugar free confectionery after a number of potential
suppliers were reviewed. Aiguebelle - CCC enjoys a high reputation
at home and overseas for its range of high-quality chocolate-based
products, and decided to invest in depositing technology to expand
its product portfolio.
Baker Perkins was selected because of its experience and
proven track record in the supply of over 500 cooking and
depositing systems worldwide. The process capabilities of the new
generation of Microfilm cookers and range of ServoForm depositors
were also key factors. Working in partnership with a packaging
equipment supplier, Baker Perkins engineered a complete,
integrated system from raw materials to finished product.
In conjunction with Baker Perkins' process engineers in
the Innovation Centre at Peterborough, Aiguebelle - CCC were able
to develop a wide range of innovative, high-quality hard candy
products. Using development cooking and depositing equipment that
is available for customer trials, Aiguebelle - CCC were able to
launch a new range of fully developed products onto their markets
quickly and easily from the new line.
Aiguebelle - CCC's new portfolio of high quality products for the
North African and European markets includes solid, striped, layered
and centre-filled candies, in both sugar and sugar-free formats.
The majority of new Baker Perkins depositing systems are
supplied with the option of sugar-free production, to meet rising
consumer demand for candies with a healthy image.
The 1,000 kg/hour capacity plant incorporates a state-of-the-art
PLC control system with touch sensitive screens and cascade control
from the depositor to the cooking system, maximising process
efficiency and production output, while minimising labour
requirements.
Compared with alternative technologies, the new Baker
Perkins range of ServoForm depositors offer improved
flexibility, increased output, improved process control, reduced
downtime and easier operation.
Servomotors control all of the main machine movements. Three-axis
control is standard, enabling patterns, fillings and weights to be
changed at the touch of a button. This gives the operator complete
mastery of the depositing process, including 'on-the-run'
fine-tuning of operation.
