Side by side and layered products

A new, multi-purpose cooking and depositing system developed by by Baker Perkins for sugar-free hard candy, and candy / crystallised Xylitol composite products, brings new possibilities to the market.

Crystallised Xylitol is a long established tooth-friendly sugar substitute, offering well proven health benefits including a reduction in tooth decay, and suitability for diabetics.  Combining a Xylitol element with a sugar-free hard candy component creates a sophisticated product appealing to adult consumers and commanding a premium position and price.

The ServoForm SFX system is intended for manufacturers in the added-value and medicated confectionery markets producing high quality hard candies, and gives the ability to make a new range of products that combine elements of both hard candy and Xylitol.

It includes two cooking elements - the Turbofilm plate pack cooker for sugar-free hard candy, plus a unique crystallisation process for Xylitol.  Both feed into a single or twin headed ServoForm depositor for production of side-by-side or layered products.

A single headed depositing system can produce side-by-side two-colour products, or two-colour 'short term' layered confectionery.  The bottom and top layers are deposited separately from a split hopper, but with only a brief time interval.  Because the bottom layer does not have time to set thoroughly, the top layer sinks into it, creating some interesting effects such as 'eyeballs'.

Long term layering involves a twin headed machine, with a long dwell time between depositing of each layer; the lower layer has time to set and the second deposit sits cleanly on top to give a true 'layered' effect.

Baker Perkins has also developed the option of three headed depositors for triple layered sugar-free and Xylitol products with a genuine 'sandwich' appearance.

The ability to validate for cGMP production, with a high level of control over product traceability, provides many competitive advantages that are attractive to companies in the medicated and functional confectionery sectors.

The SFX system allows extra value, functional ingredients such as vitamins and breath fresheners to be added to sugar-free hard candy.  Beneficial confectionery is evolving rapidly to fill the gap between medicated and mainstream products, with brands that are as enjoyable as conventional candy and also improve well being.
