Baker Perkins supplies equipment and control system
Baker Perkins has been chosen to supply equipment for two bread-making lines and a bun and roll system for the southern hemisphere's largest bakery, being built in Sydney, Australia.
Overall plant control, and the control system (SCADA) for four lines of plant at the new bakery, will also be designed in-house, and supplied by Baker Perkins.
George Weston Foods is building the $135 million bakery and distribution centre at Chullora, in south-west Sydney, which will become the centre for GWF's New South Wales bread distribution system. It has been dubbed Project Phoenix, after the company's main bakery in Fairfield, Sydney was destroyed by fire over 18 months ago.
The two new bread production lines will each be capable of producing 8,750 loaves per hour, and the bun line is rated at 40,000 per hour - that's a total of some 16.5 tons of product, every hour of every day.
George Weston Foods' choice of Baker Perkins was based on confidence in the latest technology from the world's largest supplier of industrial scale bakery equipment, know-how and services. This was backed by visits to a number of recently installed plants in the USA and the UK where Baker Perkins' world leading unit machines have been integrated into sophisticated, high-efficiency systems.
Both bread lines will incorporate Baker Perkins mixing, forming and baking technology. Features include the latest Tweedy PV (Pressure Vacuum) mixing systems which ensure excellent texture and consistency. More than 50 of these machines are at work around the world.
The state-of-the-art bread plants will incorporate features such as oven temperature control sensors to enable rapid changeover between a variety products, ranging from the heavier Noble Rise breads to raisin bread and white loaves. GWF brands include Sunblest, Hi Fibre, Noble Rise, Burgen and UP.
The control system will cover the three Baker Perkins lines, plus a muffin plant, and include every aspect of the process from ingredient feed/batching to basket handling, over equipment from a range of local and international suppliers.
The SCADA specification includes SAP integration with recipe scheduling, product reporting, batch usage reporting, downtime reporting, video capture, swipe card log in and full product tracking.
