Jacksons Bakery chooses Baker Perkins mixing and forming equipment

High capacity plant for sandwich loaves
Jacksons Bakery has chosen a mixing and forming system from Baker Perkins for a flexible, high capacity new bread plant which will increase output of loaves for sandwich making.
The line will include Tweedy dough mixing systems especially adapted to ensure rapid changeover times between the many different recipes and flavours offered by Jacksons. It will also incorporate two new Multitex4 dough moulders.
Hull based Jacksons Bakery, part of the William Jackson group, provides high quality sandwich and other bread products for the fast food industry. Jacksons is becoming a 'one stop shop' for sandwich makers, through expertise and equipment to make breads designed for the sandwich market rather than an adaptation of retail bread.
In order to eliminate any possibility of flavour cross-contamination, and to cut mixer cleandown time by up to 50% between batches of different doughs, Jacksons and Baker Perkins experimented on existing mixers: the two new Tweedy dough mixing systems will incorporate improvements to the mixing impact plate and bowl wash down system.
Jacksons also conducted trials on the Multitex4 moulder in the Baker Perkins Innovation Centre at Peterborough, and on a prototype machine in their own bakery. A key advantage presented by this 4-roll dough moulder is a strong, straight side shape that fills the tin well - particularly important for sandwich producers.
The Multitex4 moulder also maximises the benefits of the Pressure Vacuum option available with Baker Perkins 'Tweedy' dough mixers, by retaining the high cell count this process creates in the dough. This leads directly to increased volume and improved texture, and a softer crumb.
The complete Baker Perkins line at Jacksons Bakery will include Tweedy mixers, Accurist dividers, a conical moulder, checkweigher and intermediate prover, and the Multitex4 moulders.
