Mixing and forming equipment for new Normanton bakery

Leading plant baker Warburtons has ordered mixing and forming equipment from Baker Perkins for its new bakery at Normanton, near Wakefield in Yorkshire.  A key part of this investment is the choice of Baker Perkins 'Multitex4' moulders to maximise operational efficiency and bread quality.

Warburtons have specified two parallel mixing and forming systems for a high-output bread plant at Normanton, consisting of Baker Perkins 'Tweedy' mixers, 'Accurist' dividers, conical moulders, first provers and 'Multitex4' moulders, and their integrated control system. Another Tweedy mixing system will be supplied for a roll line.

The 'Multitex4' is the latest development in the Baker Perkins range of equipment focusing on improving bread quality through gentle handling, and features a unique concept of four pairs of close-coupled sheeting rollers.

Warburtons evaluated this new machine in the Baker Perkins Innovation centre at Peterborough before installing one unit for extensive testing in a production environment in a bakery in the Midlands.  The results led to the order for more machines for Normanton.

Warburtons particularly appreciated the continuous operation of the Multitex4.  The use of centralising rollers and close-coupled sheeting rollers with no scrapers or transfer plates means that jams are eliminated. The system is also designed to process any double doughs effortlessly.

The Multitex4 was introduced last year, and already 40 machines have been ordered by bakeries in the UK, continental Europe and further afield.  The four-roll arrangement improves quality through close control of size, shape and length-to-width ratio of the dough sheet before coiling.  Coiling is tighter, and there is much less stress on the dough because thickness reduction is more progressive.

The resulting benefits shown in tests include better resistance to tearing; a whiter loaf up to 18% softer; and a strong, straight-sided shape that fills the tin well.  The Multitex4 sheeting head can be retrofitted to existing moulders from Baker Perkins and other suppliers.

The Normanton project is another investment in growth by Warburtons, a family owned company producing over one million bakery products each day in 11 bakeries.
